Our Lunch With Beef

This is one of my favourite curries and I always enjoy preparing this. But I am terribly scared of the "red meat" involved, so there is a strict restriction at home. Recently, one of my close friends under much coaxing from me started selling beef cutlets from home. The woman has a lot of potential but doesn't tap it, there is nobody to inspire her, nobody to push her-she has wonderful culinary skills as well but she is comfortable sitting under her husband's wings and letting him run the show.

I am so happy for her now, that she is doing what she is passionate about and realizing her innate talents.
Recently, she has started weaning off and slowly reaching out to the public and has even started selling chicken as well as veg cutlets and it was through her that I got this wonderful beef.
She has her man Friday who brings it to her home and it was such a nice feel to run my knife through the meat and they were diced into cubes and in no time the onions, tomatoes, ginger, garlic and coconut bits were chopped and ready to start my curry.
Will continue the recipe in a while...Updating now...

In a pressure cook, drizzle in a tbsp. of coconut oil, allow a tsp. of mustard seeds to crackle and then saute the chopped veggies mentioned above, As they turn translucent and mushy, add a tsp. of turmeric powder, Eastern Meat masala, pepper powder and Kashmiri chilly powder and toss them all about, do add a tsp. of saunf/perumjeerakkam/fennel seeds as well. It does help in digestion.

At this juncture add the chopped coconut bits and saute them well and then add in the cleaned and diced beef.It will release its own juices but do add half a glass of water as well so that the beef would cook in the cooker. Add adequate salt and let the beef cook in the pressure cooker for around ten whistles. Once it cools, check it again and allow it to cook for some more time without the lid on.I do at times add some tomato puree or tomato sauce for a little bit of sweetness.

Add in half a handful of curry leaves and drizzle in a little bit more of coconut oil, taste, check the spices, add more meat masala or chilly powder.

The beef is ready. It must be soft and well cooked by now, ensure there is enough gravy. Best to have as lunch.
