Crab Meat Pizza

Yesterday was just one of those "busy upto ur nose" days when I had piles of chores lined up for me both with regard to the commitments at home and towards the students whom I am tutoring.

Taking a lightning break in a couple of days to meet one of my long lost buddies from London...She gave me a condition if I wasn't able to come down, she would be heading towards my side with her teenage boys...Gulp! So I am opting the easy way out by going over to our hometown which would be my preferred venue for our rendez-vous cause I was not in the perfect physical state to handle two teenagers...that too Boys!!!
Hence, owing to all the stuff piling on and exams round the corner for my students, have to teach and prepare them on a warfooting! It is an ongoing process...

Hence, thought of having something light at home which didn't demand so much from me.

Remembered I had some crab meat, some lovely veggies and whole wheat pizza base (store-bought). If I made some filling pizzas with the meat et al, it would keep a few tummies at home content for a while and I could go about my work in a more organized way.

In a saucepan,I drizzled in a bit of olive oil and then tossed in coarsely chopped onions,green bell peppers,green zucchini, a handful of mushrooms and let them saute for a while. Added a bit of ginger garlic paste, adequate salt, a tsp. of my spicy Eastern chicken masala and once they all combined well, added a few sliced flavoured sausages and the crab meat that I bought from Supreme SeaFood, Chennai.
Switched off the flame once the crab meat changed colour as the rest of the cooking would take place in the oven when the cheese melts over it. Do taste for spice and salt and add accordingly.Squeeze half a lime over the dish as my late Mama always used to tell me to do so especially when one deals with seafood or meat.

If you prefer the crab meat on its own, avoid all the other usual suspects-like zucchini/sausages/mushrooms and go ahead with the same recipe.

Take each flattened Pizza base and spread a generous amount of store-bought pizza sauce on it.

Lay out the cooked crab meat along with its accompaniments, grate the mozarella cheese over the meat,toss bits of sun-dried tomatoes, sprinkle over it oregano and chilly flakes and finely chopped spring onions.
Into the oven until the cheese melts over it. Voila! your crab meat pizza is ready!

Trust me, these are indeed quite filling and I didn't find anyone at home sniffing their way into the kitchen for more food.As lunch was filling, dinner was late!
