Broccoli Omelette & Left-over Idlis
The other day there were some painful thoughts going through my mind...for a moment I thought I was losing it. External stimuli was trying to keep me off my tracks, all my happy thoughts were being squashed...thankfully due to my grit, call it genes, I stayed put and did not let it affect me too deeply.
Realized I have to pay attention to Me from time to time.
So that morning, made myself a lovely omelette in which I sneaked in chunks of broccoli, they looked like little trees in my whisked eggs. Take eggs to the desired number, add salt and pepper to taste, finely chopped onions, a green chilly and these chunks of broccoli. In a well oiled,hot saucepan, poured in the whisked eggs carefully and prepared my omelette. Flipped both sides. truly a lovely crunch to your otherwise monotonous omelettes. Sprinkled chilly flakes and more black pepper powder to it before serving it to MYSELF :)
Soon the family gathered and everybody wanted a piece of it, so made for them as well. Do prepare with mushrooms, baby corn or other veggies of choice.
The above pic shows my left over idlis done a couple of days back. Diced them and tossed them about in a wok in which a tsp. of mustard has crackled, along with thinly sliced onions, green bell pepper, adequate salt, peas, masala peanuts and sprinkled in a lot of store-bought chutney powder. The chutney powder gave it a nice spicy feel and took the taste to another plane. One can add more veggies of choice or even add thinly siced salami or shredded chicken if you prefer.You can add nuts of choice as well!
