Palak Eggs

As my son has just started gymming in a proper gym and not at home which he had been doing for months, I've been given the task of ensuring that he has a lot of egg whites atleast six a day for his age.

Can u imagine,it took just five seconds for the gym instructor to coax him to eat egg whites while both my husband and I had been trying for years...what an irony!

Anyway, boil and keep aside a few eggs. Blanch and keep aside some palak(spinach) and later liquidize it to a smooth puree as well
Into a shallow saucepan in a tbsp. of oil, saute a finely chopped onion,a garlic pod, one or two green chillies depending on your liking towards spicy food, a bit of ginger, not too much otherwise the ginger would overpower the dish. As they fry lightly throw in a bit of turmeric powder, a tsp. of coriander and the pureed palak.
Toss them all about, add in the required salt and as the dish combines in flavour and colour, add in a bit of cream and garam masala, swirl it nicely.
Slowly slide in your whole eggs/egg whites alone or if you wish to use cubed cottage cheese(paneer) please do so at this point and the dish is done.
