Cruise Away On My Zucchini Boats! All Aboard!
Another weekend ahead and a lousy and terrifying three weeks that went by-loads of trials and tribulations...for the husband and I. Although we tried to keep our minds active with our individual work and writing...there was a lot gnawing into our hectic schedule with a very sick son at home and a couple of eerie hospital visits.
Finally the doctor was able to zero in that he has typhoid. There is nothing more disturbing than having a loved one be it a parent, a sibling, an in-law or one's child sick at home and you are clueless on how to relieve the pain they are in.When they were younger, I would hug them tightly and would hope that whatever sickness they had would be transferred to me...and that belief would make them stronger as they always felt Mom could relieve their pain.Now catch them coming close to their Mama! Why do they have to grow up? :(
I try to keep myself sane as I have a very fragile husband at home, who will mope around whenever the kids or I get sick. And I always remember especially after Pa passed away..."The Show must go on"...hence this post as well :) the clicks must go on and I ought to cheer my readers despite my sadness of watching my lil imp unwell :( He has lost weight as well :(
So meals are a bit different for our son-more fluids, husband made him a lovely soup a while back(blended in a lot of veggies in it that the imp couldn't detect!) and I went about my business of baking some Zucchini cavities! Take about two big zucchinis, cut it midway, scoop out the soft seedy flesh out and leave them with their cavities facing you on a baking tray.
Lightly brush them with olive oil and keep it ready till your chicken mince is done. At this point the zucchinis look like little boats awaiting their passengers on board.
My chicken mince meat-in a wok on a high flame, a tbsp. of olive oil, sauteed some finely chopped onions, once they are slightly browned, added in diced tomatoes, ginger garlic paste...once all that gets mushy add in lemon pepper powder,finely chopped green chilly and a broken dry red chilly as well, Eastern Chicken masala and as they sort of get familiar with one another, add in the nicely diced yellow bell peppers, if you wish to add the other colour bell peppers as well please feel free to do so, cause a riot of colours!
To this add in the minced chicken(any meat) and let it cook releasing its own juices under a lid. Add in salt once it is midway of cooking and around two to three tbsp. of canned baked beans. Mamamia! that's the part I love the best, the sauce in that merges well with the mince and check for all seasoning. If it lacks spice, add a tsp. of chilly powder, a tsp. of a garam masala and finish the dish with a nice dash of squeezed lime. Do ensure that your mince is cooked well and taste and spice is perfect. Adjust accordingly!
Garnish with finely chopped spring onions. Please keep in mind that you can reduce the salt content as you will be using grated mozarella cheese which is salty as well. So please be alert.
Vegetarains can use crumbled cottage cheese(paneer) instead of the minced chicken.
Squeeze lime once again before serving! Enjoy!
Scoop this cooked mince into the zucchini boats that are waiting for you. Add in the grated cheese, a few,sliced olives with pimentos and into your preheated oven/microwave until the cheese has melted over the zucchini and the dish has baked to your liking.
This is a meal on its own you can slice your way through and have them or just grab a boat in your hand and stuff it into your mouth and enjoy all that melted cheese oozing out. You can also have it as a side dish along with plain rice/rotis or bread.
