Corn,Bell Peppers, Cheese Slices...
Take the required amount of corn kernels, finely chop an onion or two, finely chop green chillies(spice to taste) any coloured bell pepper; I have used red capsicum. Saute them all in a tbsp. of butter and as they change colour, add in chilly powder as per the spice you require, pepper powder, some dried oregano and salt to taste.
Let them get mushy and then add in a nice heap of ketchup. Let it merge with the sauteed corns and bell pepper. You may garnish with finely chopped cilantro. I didn't have a fresh bunch, hence left it so. These can be scooped and filled in tortillas or your tacos.
I have topped my salt biscuits with this lovely, spicy veggie delight.The spicier it is, the tastier!
This cheesy dip shown above can also be used as a dip or as a cheesy spread in your rotis, tortillas or any wraps of choice.
Take some milk and throw in a tsp of butter and let it boil.
Make a paste of a wee bit of cornflour and some cold milk and set aside. As the milk is boiling throw in two or three flavoured cheese slices and the set aside cornflour paste. By now it will get thicker.
In another sauce pan, saute some finely chopped onions and any coloured bell pepper and when they get nice and mushy add that to the above cheesy mix and stir it a while and then switch off the flame so that it doesn't burn or stick to the pan. Sprinkle some freshy ground pepper and chilly flakes. Do taste for salt as the cheeses have salt in them so add the salt accordingly.
I added in a tsp. of mustard sauce to the cheesy dip, it is optional.
Enjoy it as it is or with some bread, or as a layering on your pizza base or as mentioned above with your nachos, rotis, fishfingers, tortillas, papads...do it any which way you wish :)
