Varatharaccha Kozhi(Chicken in roasted and ground spice)

In the meanwhile keep your pieces of chicken ready. You will also need three or more tbsp of coriander seeds, dry, red chillies, pepper corns, fennel seeds, fresh ginger and garlic, star anise,cinnamon stick,cloves and green cardamon(two to three) and coconut oil. Be ready to dry roast all these...catch u soon! husband is pestering me to watch a home video :) with him.

So, roast all the above mentioned ingredients until the raw smell disappears and then grind the same and set it aside.
In a heavy bottom vessel, drizzle in some coconut oil, those who do not like the smell of this may use any oil of choice, but as this is an acquired taste, this dish calls for coconut oil. Into it, crackle a tsp. of mustard seeds and then add in sliced onions, as it slightly turns translucent, add in the ground mix and keep stirring the onions, add in the cleaned chicken pieces and let it be wrapped in this spice mix as you toss them all about.Do not add any extra water!
Add in a tsp of turmeric as well. Place a lid and let it cook in its own juices, mid way, throw in a few slices of tomato and add in a tsp or more of tomato puree.
Let the chicken continue to cook with the lid on. Add adequate salt and toss in curry leaves and a tbsp of coconut oil and keep tossing it about with your spatula. At this point, let it cook without the lid and allow it to slowly simmer down. Let the juices reduce down in quantity.
I've added extra chilly powder and pepper powder to add to the spice and colour of the dish. Squeeze some lime over the finished dish.
It's a nice rainy day and this dish was apt for the weather. The kitchen smelled good with the roasted coriander and other spices.
The vessel has been wiped clean as well...Oh well, I was the last to lick the vessel clean!
