String Hoppers/Idiyappams Exploded

Since I got a message on FB from one of my cousins,VV, been contemplating what to concoct and serve him when he comes over. It was a fleeting visit as he was meeing up with friends and had plans and as this big sis of his happened to live here, he promptly let me know.

We were meeting after nearly a year, the last we spoke and met was during my father's passing and at his funeral :(

I wanted to keep it traditional and was sort of expecting him around elevenish in the morning. Had prepared Idiyappams(Red rice idiyappam recipe has been posted earlier) with white rice powder.
As he didn't know the directions to my place, he handed the phone to his friend, so now that was two of them, so had to come up with something more innovative quantitywise.

Hence, I decided to dice the Idiyappams/String Hoppers that I prepared and tossed them about in coconut oil in which a tsp. of urad dal, onions and tomatoes were in deep discussion.
As they got mushy, added in the ginger garlic paste, adequate salt(please remember salt has been added to the string hoppers so adjust accordingly), dry red chillies, my favourite Eastern Chicken Masala spice and curry leaves.

With all of the diced Idiyappams being evenly coated with the mushy onion-tomato mix and the spices, I switched off the flame. Garnished with more curry leaves and some grated coconut!
Powdered my nose :) (not literally!), drew my eyes (the max makeup that I use) and awaited eagerly for the duo. Of course, they didn't turn up on time and it was close to lunch time by the time they did turn up, Grrrrr!!! well they ate hungrily whatever I had concocted eagerly for them, took second or third helpings! and enjoyed with two pots of coffee.

Wow, that's a delight indeed! Oh, I did serve the string hoppers with Egg roast.

We grow up with cousins sharing a lifetime of memories right? They are actually some of our dearest friends...atleast while growing up!

Thanks VV and his buddy, S who came home admired and appreciated my home, my kids' pics that were intently and diligently taken by the husband and framed, appreciated my kitchen and of course the food and coffee.

It's rare to find people appreciating openly and the duo did it genuinely!

Do try out these recipes, always nice to do such things especially when you have leftovers in this case Idiyappams :)
