My Patriotic Pan-Fried Patties

 The Patriot in me...when the boys were younger, I often did those tri-coloured sandwiches(recipe has been posted in an earlier post), slowly graduated from there to colouring the Idli batter, Idiyappams and the works with the three prominent colours on the flag wih natural food colours/veggies/spices

Today,I've grated Zucchini, carrots, white onions along with crumbled cottage cheese. The zucchini and carrots were grated and tossed together in some salt and later squeezed out thoroughly to remove any excess water(Readers, I skipped this step, so I did suffer the consequences...instead of getting nice fritters, I got myself patties)...there are solutions for everything rite? So, please do squeeze out the veggies thoroughly.
 Following that, I did add some grated baby corns which were lying on my countertop as I used many of them in a marinade(will be sending a good family friend a few skewered veggies later this evening) and left the apex of the corns for later perhaps in an omelette! Thus, it was wisely grated into this veggie mix as well.

Added in a tsp. of Classic store bought pesto, sprinkled in pepper powder, a tsp. of spicy Andhra Chilly powder, finely chopped green chilly, salt to taste and a tbsp. of oil. Toss it all about, then shape roundels with this mix with the help of a spoon or in the palm of your hands, dredge them in some flour and into a beaten egg and lightly fry them on a hot griddle in which a tbsp. of oil has been drizzled in.

The flour and beaten egg helps to bind the roundel. Vegetarians can avoid the egg!
 Flip both sides so that they would brown well or to your desire.
 Owing to the water that I did not squeeze out, I did not get fritters, instead they turned out as patties. Serve them like so or in between two slices of bread with a cheesy spread on one slice and other sliced veggies like a cucumber or a tomato.
