Egg Fried Rice-To My Sista in the UK

 I would like to call u my real sister-MI, am truly blessed to be friends with u...I just love the way you encourage and inspire me long distance...you never cease to care.I would like to send this post your way and hope while you sit in the UK, you will feel the warmth of my gratitude!

My theory and practice is to thank people whenever opportunities arise coz I do not know what tomorrow is going to be and don't know about the next day until I wake up from my slumber and absorb in the sunshine through my window and when I am at my desk, I am grateful to my readers on real time, fellow bloggers, friends, relatives and especially you MI chechi that we are alive and you are up as well on your side of the world and we are all there sponging in one another's spirit and enthusiasm of life.
 Just as my pics touch a chord in your life, let my words guide you through this recipe.
A picture that you loved MI captured with the naural light falling on my kitchen floor while I placed all these natural elements on my chopping board(again natural looking wood) and showing off the egg fried rice I prepared for my younger son.

Cook and keep aside any long grain rice preferably any rice that smells good-Basmati is good!

In a wok, on a high flame with all your ingredients by your side ready to be thrown in, drizzle in some cooking oil, fry finely diced onions,carrots, beans,a tsp. of sugar, chilly vinegar, soy sauce,shredded ginger and garlic, pepper and salt. Then break the eggs that you require depending on the amount of rice you intend to use and the people you plan to serve and let it cook through, you may reduce the flame at this point and let the eggs scramble slowly and throw in sufficient hand snapped dry red chillies.

Check the seasoning, if you feel it requires more pepper, do add in as the eggs require salt and pepper.
Throw in your cooked rice and let the marriage happen, toss them all about to give you the fried rice appearance.
And like confetti thrown on the married couple, throw in your finely diced spring onions. I've just arranged two slices of grilled zucchini and my zucchini patty to decorate the dish :)

I read somewhere..."having a relative outside the country was a bit like winning the lottery." forgot the name of the book, but I think this aptly suits what I feel right now :)
