Mothers & Strawberries

 The husband goes for his usual walk and comes home with a box of strawberries..."I felt they looked good and thought you would want to use it in one of your recipes." WOW! It was like he read my mind...I did want some fresh fruit but was unable to go out that day.

Just the previous night some milk had curdled and that got me all upset...I hate to see stuff rot or wasted.I stood in front of that curdled milk for a while and thought to myself, if I strained that milk and hung it overnight in my cheese cloth I would get cottage cheese, that'll make a nice attempt to salvage that curdled milk and that's when the box of strawberries made me take a detour...
 Ok, so my cottage cheese, looked smooth and fresh and I must tell you, I did not throw the whey when I strained that curdled milk, it went into my roti dough while kneading it instead of lukewarm water :)

To this cheese I added icing sugar and kept whisking it slowly streaming in some cream and I got a nice sweet cheesy looking thingie...can I call it cream cheese, I guess!!!
 So in went a layer of crumbled biscuit etc(recipe under a Christmas Dessert in a previous post) and I levelled that neatly in the bowl of choice. Kept it for a while to chill in the fridge and on top of it, I spread out this sweet creamy mix. You can pipe it on as well. Added a few pistachios and sliced stawberry for garnish and left to chill in the fridge.
A very simple no bake dish! I don't know if this is how cream cheese is made, but this was definitely a success story.

Recently, a few of my sons' friends' parents passed away-they were mothers my age. It makes me, invariably wonder about those children...

I don't know and can't picture how my sons will take life without me. I would love to dedicate this post to those children and may all their mothers' beauty pass on through these children. Always in my thoughts...
