Lovely Green Rascals-Green Tomatoes
Chop the green tomatoes like so alongwith green chillies. |
In a sauce pan add four tbsps. of gingelly oil. Let a tbsp. of mustard and fenugreek seeds crackle in it. Add a nice tsp. of turmeric powder, two to three tsps. of chilly powder. Mix them well in the oil, to it add the green tomatoes, toss them about till it cooks to a medium half cooked stage, then add in a tbsp. of brown sugar, it helps to caramelise the whole dish, add in some hing/asafoetida. Also toss in some Kalonji or Nigella seeds, a tsp. of black pepper corns and some curry leaves. Add adequate salt. Let the dish cook a bit, then drizzle in a bit of vinegar.
The Green tomatoes have a unique taste,appearance and flavour. A nice side dish to take along with you as a potluck dish or when you run out of ideas to cook something fast-if you have green tomatoes, this recipe will be handy. Almost like a pickle.
