Coriander/Cilantro Sandwiches

One of the simplest sandwiches taught to me by my mother when I was a teenager were these easy to make Coriander sandwiches. Take a bunch of fresh cilantro/coriander leaves, after a good rinse, pat dry and place the leaves in a food processor along with two pearls of garlic,green chillies(to your liking), a little bit of ginger,pepper corns,salt and a tbsp or two of water and grind it to a paste or as shown in the picture. Once the ground mix is ready ensure that you squeeze half a lime over it to keep it fresh. Mix it thoroughly with a spoon so that the lime blends through.

 Spread it on one side of your fresh slice of brown bread and on the other slice spread butter/tomato swirl/cheese spread. Slice some cucumbers or tomatoes and place them in between the two slices.
My fondest memories of these sandwiches were making them for my sons when they were little, as tri-colouerd sandwiches especially on our National holidays to keep in tune with the patriotic spirit! I would make the white,plain coconut chutney/green chilly chutney/red,tomato chutney and spread them between slices and layer them to exhibit the three colours.
