Spinach Rice with Kadai Masala Prawns
Prawns echo "Cholestrol" so this is a rarity at home...and as I am allergic to sea food, the temptation to buy this whenver I do come across it, is strong! Back home in my village, whenever my father was down for the holidays and when we kids came visisting, he was very particular about buying me prawns or crabs and would also warn the other siblings that they can eat fish so this is exclusively for me. No matter what the cost, he would buy it...lil things parents do to make us feel wanted and so very pampered. Now that I am a parent myself...I would go to any extend to deliver than to preach! I am proud to say that I take that from my father!
A very simple combo-got some lovely spinach which I neatly and finely chopped, added it into a Kadai with gingergarlic, sliced onions, half a sliced tomato,a tsp of turmeric,a tsp of cumin powder and salt to taste.It would be done in less than eight minutes Threw in some cooked rice and added the salt to balance once the rice was also added. Finished the Spinach Rice dish with a tsp of ghee and tossed the rice about.
The prawns were more elaborate in preparation-Ground ginger, garlic and a few cashewnuts were made to a paste and kept aside. The Spices-Two tbsp of Coriander powder, two and a half tbsp of Chilly, half tsp of Pepper,one tsp of Cumin, a bit of turmeric and a tsp of garam masala were mixed with some lemon juice and two tbsp of water.
Another Skillet was heated and around two tbsp of oil was poured, to it add a sliced onion till golden brown, then add the ground ginger-garlic -cashewnut paste. Add in the prawns mixed about in the above spices, stir fry till the prawn is done, add the seasoning and check for balance in flavours. Keep stirring till it reaches a brownish reddish look. Serve Hot!
