Pad Thai

 Pad Thai to me is the ultimate street food in Bangkok. I have so many fond memories of my lil' trips to be with my husband at short intervals a couple of times. It is a stir fried dish made in a wok-I have made mine with fresh shrimps/prawns, you can use dry shrimps/chicken. Vegans can replace that with tofu.
It calls for rice noodles,tamarind juice,vinegar,salt,chives,garlic,ginger(galangal),toasted peanuts, two tsp of sugar,fish sauce(vegans can use soy sauce, I have used soy sauce as I am allergic to fish) chilly oil,chilly flakes,bean sprouts( I didn't have that either) an egg and pepper powderSo with most of these ingredients at hand and near my wok, I started the stir fry.

 Do soak the rice noodles in advance in some warm water, once it is soft and not mushy, drain and set it near the wok as well.
In the wok which is on a high flame toss in a tbsp of chilly oil, the tamarind juice, the chilly flakes, sugar, vinegar,soy sauce for vegans(fish sauce for others) ,ginger garlic juliennes, give it all a nice good stir, instead of bean sprouts I used shredded cabbage for the crunch,throw in the tofu/ cleaned & deveined prawns added in an egg(vegans can avoid this) and scramble and fold it in along with the rice noodles,salt to taste. Garnish with the pepper powder,toasted peanuts and juice of a whole lemon. All stir fried and tossed about. Do not be tempted to add in more oil. Chives and Chilly flakes can be used as the final garnish over the dish.
