Mushrooms speckled with Pomegranate Seeds
I love button mushrooms and so does my older son. I do miss him, he is not around...he is out carving his future in a professional college away from where we live now!
So, rinsed and pat dried some mushrooms and immersed them in a ziplock bag in which I placed the marinade. I ensured that each and every mushroom got massaged well with the marinade last night itself. I prepared the dish today!
The Marinade-A nice bunch of fresh cilantro/coriander leaves blended with two green chillies, some lime-ginger,garlic, any spicy masala of choice, a few cashewnuts,sweet and sour tomato sauce, the juice of a whole lemon and adequate salt to taste. Placed this marinade in a Zip lock bag with a tbsp of olive oil.
This marinade can be used to rub over any non-veg dish as well.
Remember no additional oil has been used as olive oil was already rubbed in. Check you seasoning and adjust accordingly. Serve it on a bed of tomato slices which are sprinkled lightly with salt and pepper. Place the mushrooms like so, dot them with a a few seeds of pomegranate, Garnish with lemon -pepper powder.

Saute the marinated mushrooms lightly with some nion rings until you get a nice Khaki green texture as shown in the pic |
