Spinach Biscuit Starters
This was a post written after an inspirational talk with somebody related and quite close to me. When I heard about the low Iron content that the person had, I thought about the times I've never even gazed at the section where all these bunches of Iron ladies would be stacked. Spinach /Bitter Gourd were always a "No No" for me...but as I age and realize its worth and its nutritive value for Myself, I do end up picking a bunch or two and am often nostalgic about the red ones.
The red spinach was quite often haphazardly planted in the backyard of my home back in our village just about by anybody who loved the land and wanted to keep it fertile, so all those who've been our helpers or just poor folk who cared for us/family would invariably plant some veggie or the other and they would grow in abundance...My Paternal grandma had this magic hand...whatever or wherever she planted something, they would sprout or grow. I could write many posts on this alone...but let's get down to these beauties :)
I've washed the bunch of red spinach, plucked the leaves carefully from their stalks/stem and blanched them slightly in warm water. Then in my food processor, I added boiled, mashed potatoes, ginger,garlic,an onion or two,some red chilly powder,my spicy dal powder, a few crunchy peanuts,cumin powder,salt and gave them all a nice blitz. Later in a skillet, added a tsp of oil and stirfried them for less than 8 minutes just giving enough time for the veggies to absorb all the spice. Do taste, add more spice/turmeric whatever to add to your taste buds.
Took my store-bought cracker and just scooped a nice heap of spinach and spread it over the cracker. If you would like to make it creamy, you could spread some cheesygarlic spread on the cracker/sandwich spread first and then place the spinach over it.
Serve them immediately as the cracker may dry out if left out in the open.
Remember this cracker is packed with Iron and it is good for all the female readers/friends/bloggers.
