Comfort Food and Plums

A very simple recipe that I learnt from a good friend and teacher almost two yrs back. It's been one of the easiest and most desirable breakfast/comfort food with my kids and I always think about my good fortune to have met this Chef friend of mine. I have made slight variations to her recipe which called for a lot of butter and spreading English mustard on one slice. I haven't used either and I know for sure that that recipe is equally tasty!


Take two slices of bread of choice-I have used Brown bread, placed a slice of flavoured cheese(pepper flavour) and two three slices of mutton pepperoni in between the bread slices. Sandwiched them. In a separate bowl I have whisked two eggs with salt and pepper(do keep in mind that your cheese slices will be salty so adjust accordingly. I have also sprinkled in a few dry mixed herbs in the egg mix (you may season it with anything of your choice) Take your sandwiched slices and hold it firmly in your hand,then carefully dip the whole thing into your egg mix and immediately place it into your buttered skillet/oiled skillet/hot griddle. When one side cooks and gets a nice egg coat, flip to the other side, compress the sandwich further with your spatula-by now your sandwich holds togther as the cheese in between has melted further and the egg coat binds the bread slices together. For a garnish, I have just sliced a tomato on the sandwich and grilled it onto the sandwich.


Please eat it hot right from the griddle.

Instead of Mutton Pepporni, you may use Chicken Salami/ham. Vegetarians can use some well marinated Cottage Cheese/mashed potatoes. I don't know what can be used as a binder-perhaps some seasoned gram flour batter?
