Been a bit held up with loads of turns and events happening on the personal front...dedicating this entire month to my son who leaves home to start his life as a college goer away from me and in a hostel in less than ten days. He has secured admission in one of the most prestigious institutes on merit and has made us proud.
So here is one of those dishes that all of us enjoyed-coat the boneless chicken pieces( preferably thighs without the bones) with a beaten egg and a tbsp of corn flour, salt and pepper. I have also added some chilly paste to it and set it aside for a while. After a while, lightly fry these chicken pieces in a tsp of oil so as to seal the chicken both sides with the coating.
In another skillet, added a tbsp of olive oil, two tbsp of tomato paste, chilly vinegar,light soya sauce and stir it well with salt and pepper, do keep in mind that the chicken marinade has salt already coated on it. Let this sauce cook on a low flame. As it starts to bubble away, slid in the pieces of lightly fried chicken. Let this cook in the sauces. |
