Jackfruit Seeds with Raw Banana Stir-fry.
Jackfruit, to me really is almost like the King of fruits with its size and taste...I love this fruit in any form-as chips,in a kind of steamed rice appam,as halwa and the works. I like it but I don't enjoy the task of removing the flesh from the main fruit skin...I love watching people do it.
So, I am a lucky bum I must say...cause in my part of town, the job of extracting the fruit is done and they come neatly packed with around six to eight of them in a transparent cover yelling out to us to buy them as they stand on the racks...but I am careful when I eat them-as over indulging in them aggravates your gastric side and invariably you may suffer from flatulence:) or burping, so I tend to eat just two.
So why am I beating around the bush? well I do not throw the seed found in each flesh of the fruit as well that too can be eaten if prepared well-I store them and do make a stir-fry with them. Mummy used to make it almost like crisps, I am yet to master that art of patience and standing by it. My funda is simple:-
the Jackfruit seeds are thinly sliced to around an inch in length. As I had just a few, I added a raw banana as well, that was also sliced thinly.
In a skillet,added a tsp of coconut oil and to it crackled some mustard seeds and then added the jackfruit seeds with a pinch of turmeric and pepper powder and a tbsp of water. Placed a lid over it so that it would could evenly and properly.
Remove the lid after a while as the restof the dish has to be cooked without the lid.The Jackfruit in comparison to the raw banana takes a longer time, hence that was placed first. Once the jackfruit became slightly crispy added salt and a tsp of chilly powder and the sliced raw banana. Added cumin seeds/cumin powder. Tossed them about till the raw banana cooked well. Added a few curry leaves after the flame was put out and a tsp of coconut oil. Toss them well in the oil and serve it with plain rice or on its own as crisps!
