This was my Sunday Special, I love doing this dish as it is one dish I don't need to bother about the finess while chopping/dicing. I just dice them into chunks-thus in this dish, I've used yellow zucchini,green bell peppers,paneer(cottage cheese), cherry tomatoes,onions and shredded cabbage.
Initially,the cottage cheese was diced and placed in a marinade of blitzed cilantro/mint and green chillies in a tbsp of curd. This was kept aside for a while. In a wok, added a tsp of olive oil, a tbsp of ginger-garlic paste, as the raw smell changes, added a tsp of light soysauce and a gigantic squeeze of tomato sauce,added all the veggies mentioned above and when it is almost cooked I have slid in the marinated paneer. As it cooks through on a light simmer, add in adequate salt and the juice of an entire lemon. Check for seasoning. Garnish with spring onions,sprinkle some pepper powder and fresh shredded cabbage and serve with noodles/white rice. |
