Pomegranate RIce with Accompaniments

I've shredded some tofu/paneer and combined it with a little bit of chicken mince,breadcrumbs and a beaten egg with salt and pepper and shaped it on my hot griddle like so, you may wet your palms to get a better round shape.
My chicken mince recipe is already given in one of my earlier posts and I've also used breadcrumbs infused with herbs which I always keep stock in my fridge. A beaten egg and breadcrumbs help to bind stuff together especially when we want to shape them to our desire.

You may notice that I've also used white sesame seeds around the ring/roundel. Cooked this on both sides on my griddle over a low flame so as not to burn or break off. Once both sides are flipped and cooked, break an egg into the hole, I had been quite careless and the egg did run through the dish, if you take care, you can break it and cook it exactly in the well in the middle. I've spinkled in loads of pepper powder for flavour and appearance. Then placed a lid over it so that the egg would cook through, I did place a slice of tomato once the egg cooked and flipped the dish so that the tomato would face the griddle. By now the runny egg coats the entire dish and will hold together.
This is a dish adapted from Poh's kitchen, I think she used a lamb mince with her own seasoning, I have used a lot of variation to suit the tastebuds of my family. I am grateful to have learned if not perfected this dish created by her. I have added paneer, she has not

Pomegranate Rice-In a blender I have used a nice, fresh bunch of cilantro and mixed it well with ginger-garlic,two green chillies,salt and a tbsp of grated coconut. In a wok, I've added a tsp of oil, to it I added this coarse mix along with a tbsp of peanuts which adds yet another burst of flavour in your mouth and has this divine crunch. The coarse mix along with the peanuts were fried slightly, then the lovely ruby pearls of pomegranate seeds from the fruit were used, all tossed around and to it the cooked,long grain rice was added( I did not have long grain rice hence opted for the ordinary raw rice) Do check if the salt is sufficient for the rice as well...add accordingly.

The Broccoli was steamed with a bit of salt and lemon-pepper powder for two minutes. They were neatly aranged as the pic shows. Garnish it with a few green sprouts and fresh, pomegranate seeds.


Very less amount of Oil has been used, extremely healthy and a filling afternoon meal.
