No Oil-Aubergines with Potatoes on Leaves

Aubergines were neatly and thinly sliced and coated with salt and sambhar powder and kept aside for a while. In another clean vessel, take some gram flour powder/besan and to it add enough water to form a batter and ground coriander leaves with ginger-garlic and green chilly paste. Add salt accordingly as you have already coated the slices with salt. Sprinkle some pepper powder as well. Dip the slices in this batter and grill them after a while.If you place a lid over the dish, it will cook in its own juice and you need not add any oil to the dish, but if you are tempted to coat the griddle with oil, please do so. Flip both sides so that they cook evenly on both sides and gets this slightly charred look.


The Potatoes were also thinly sliced and coated with a bit of turmeric powder,,ground ginger and garlic paste, salt and pepper. It was then rolled into homemade bread crumbs infused with various herbs-oregano,parsely,rosemary etc This was also pan grilled and closed with a lid to obtain the results as shown in one of the pics. Brown both sides to give  it a nice contrast, do check in between if they are cooked. The breadcrumbs give it an additional kick or as they say the X factor :)





The grilled Aubergines were served on cold icebreg lettuce once again for contrast and teture in the mouth.

Served the potato slices with boiled eggs on purple cabbage leaves, add chilly flakes or squeeze a bit of lime or sprinkle some lemon-pepper powder for additionl presentation and taste.
