Puris/Pooris with mashed Potatoes
I do not vouch for this dish on a daily basis or even on a weekly basis, have this once in two months when you run out of ideas for a breakfast dish.
Despite all the healthy stuff I've hidden within the puris, this eventually gets fried :( and I do not advocate fried stuff especially deep fried! Stir fries Ok, shallow fries-acceptable but not this! But dear readers/fellow bloggers, this is indeed one of the yummiest ideas I've learnt and adored as a child. On various occasions, I would have flattened each puri for Ma and even shaped it for her using various tumblers, shapes...but as an adult, I do respect my health, hence am doing this post just for you guys who are new to this and with a devilish grin I must admit that I've added peas as a paste in this dough which my sons never suspected...they just feel that Mama has made some green puris with cilantro/mint ...hee..hee, do you see my devilish horns popping out?
Ok, back to business(with knitted eyebrows)
Peas Puris with Mashed Potatoes- The recipe for mashed potatoes is given in an earlier post where I created three types of dosas with their accompaniments.
How to knead the peas puri-In a skillet, I diced and sauted an onion, along with a handful of peas, adequate salt, a tsp of amchur (dry mango powder) and a green chilly.
I ran this in my food processor once it cooled down along with two tbsp of milk. Added this paste mix to my multigrain flour along with a pinch of salt (keep in mind that you have added salt to your pea mixture) along with a tsp of ghee(clarified butter),a tsp of sugar and knead it well, add water while kneading only if required, sometimes the pea mixture in milk will help to knead the dough. Make it a smooth, pliable dough. Keep it aside for a while to rest, during which you can prepare your mashed potatoes.
Pinch out a small round ball from the mother dough and flatten and shape it out with the help of any round cookie cutter or just with the mouth of any glass/tumbler that you drink in. I am pretty good at forming the puri discs without any of these...like all experience mothers/fathers/cooks, practice makes perfect, right?
See the light green tinges on them, they are the peas mashed and hidden in :)
Deep fry them and wait for another two/three months to make this again. Hugs! Please drain off any excess oil (GULP!) on absorbent paper tissue.
You can prepare other accompaniments with puris as well like-a simple onion tomato stir fry, chenna curry etc
