Will update the Potato/carrot thoran and Kovakkai fry soon...long day out with my son,he is writing various tests to make his entry into college soon...my head needs some rest and so do my eyes...Hoping you all will have a Wonderful Mother's Day!
My Update:- A lot better today!
So take your potatoes, dice them, even a carrot or two, dice them as well, combine them with a fistful of grated coconut, diced onion, a tsp of turmeric, cumin seeds, a tsp of salt and toss them all in an oiled skillet with spluttered mustard and curry leaves. I have also added some cooked horse gram as well to both these veggies once they were almost cooked. Ensure both are cooked well espclly the potatoes and serve it hot.
The Ivy Gourd Fry-Slit the Kovakkai length wise and add it along with sliced onions in your skillet dabbed with oil along with a tsp of turmeric and salt. It may take a while to cook, do add some nice rasam powder/sambhar powder for spice. I have added some Andhra chilly powder for spice and cooked it under a lid which the allows the veggie to cook in its own steam. Once cooked, serve it hot.
