Palak/Spinach lentil curry

Wash your Palak/Spinach well, pluck out their leaves and place them in a pot of salted, warm water for a minute or two, then extract or drain the leaves and set it aside for blending and pureeing. This blanching helps the palak to retain its fresh,green colour and also cooks it slightly.







I think the best choice is this curry with rotis/naans. It may not go so well with rice. But do try, after all it is a healthy curry.
