Biscuit based Chilled treat





I noticed that my audience/readers are more from the US of America...The stats actually crossed the viewership I have from India. So, before you feel I am bragging about something...no I am not friends/fellow bloggers, I just want to thank you all for browsing through. To add to the spirit of thanking, let me also wish all my Women readers a Wonderful and Beautiful day/evening/night whatever! My older son wrote me a long letter thanking me about my role in his life, my younger one just kept hugging and squeezing me since 12 am of Mother's Day. Tonight, I think I will take a much deserved break from the kitchen and hopefully we will go out to dinner somewhere! So, people...lovely Women, gracious mothers, young lasses,dedicated readers...this is for all you ladies! I have no real name for this delight...call it what you may please :)

Initially I crushed and powdered some Marie/tea/Digestive biscuits in my food processor and set it aside. Melted some butter over a low flame, added two tbps of cocoa powder to it while I continuously whisked it over the flame. Set it aside to cool. Broke an egg and lightly beat it with two tbsp of sugar with another whisk and added it slowly to the cocoa and butter mixture by steadily whisking it and bringing it back on the flame. Ensure that all the sugar granules have dissolved and are mixed thoroughly.Shut the flame.

This cocoa-butter-eggy mixture was then added to the powdered biscuits that you kept aside in the beginning. Give it a nice mix, at this point, u can add in dessicated coconut, or a mixture of nuts or whatever that comes to your mind...I have just added slivered almonds. Take any dessert bowl/dish of your choice and neatly lay this mixture into it and do not allow any gaps to form, you can use the palette knife or the back of your spoon to evenly layer the mix. This has to be chilled to set.

Next, as I have decided only for a two tier dish, I made a little custard with some cream and custard powder and slowly cooked it over medium heat, again added two tbsp of sugar so that the custard would also taste sweet and a tsp of vanilla essence.(You can always google and make fresh custard with eggs and milk) You can use fresh vanilla extract if you have. Once the custard looks neat and ready to spread, take out your set and chilled biscuit mix and spread this custard evenly over the set mix. So now you will have two tiers-the biscuit base and on top the custard. Garnish with any fresh fruit and dust it with some cocoa powder using your tea strainer.

You can make this a three tier dessert by layering the third layer (after the custard is chilled and set)  with melted chocolate(using the bain-marie technique)

Once it is set, you should be able to neatly cut out the bars and serve it straight from the fridge. Enjoy! you can also decorate with chocolate curls/shavings.
