Vegetable Kurma

This is a tasty and aromatic side dish that can be had with
rotis/chapathis/naan etc. Choice of veggies is up to the chef-but best that goes with any kurma are cauliflower,beans,potates,carrots,peas, knol khol etc. Let these veggies cook on a medium heat with a tspn of turmeric and half a glass of water, please do not over cook any vegetable. They should not lose their nutritive value. Do not make this dish runny/diluted by adding more water. This is usually a thick, gravy based dish.

In the grinder, grind a few cardamon,cloves,green chillies,ginger, garlic and a stick of cinnamon. Do not let the spices overpower so adjust the cinnamon/ginger accordingly. Add this ground mixture to your cooked veggies and toss the paste so that they would blend well, add salt to taste.
Grind a handful of grated coconut with three tbsp of water and a few cashewnuts so as to get a nice white based paste. This is then added to the veggies and blended well, the cashewnuts help to thicken the dish and also helps to resemble a gravy. Garnish with Cilantro.

A wonderful sidedish with your rotis or with Idiyappams(string hoppers)
