This is one of my easiest and tastiest and do feel that one of the healthiest breakfast dishes that can be prepared in a jiffy. I've used the roasted version of the Rawa/Sooji. If you do not have that, please roast your rawa.
In a deep-bottomed pan, add a tbsp of oil, if you use ghee it is the tastier version and the end result is to die for...but I would like to skip that initially. Hence, used oil, let a few mustard seeds splutter in that oil, add a few urad dal as well, once the dal turns slightly burn with a nice aroma emanating from your frying, throw in some diced onions,a green chilly for spice and carrots( I know people who add many other veggies but I like to keep it simple), do grate in some ginger as well! As they turn slightly brown, add the required salt and water according to the amount of roasted rawa you are using.
Being the Inconsistent Chef that I am, I have it all in my mind and just use water that I feel would soak in the roasted rawa once it is put in. So, it would be nice for you guys to do a trial and error method so that your breakfast dish doesn't look or feel too dry/soggy.
So, once the water boils, slowly yet steadily throw in your roasted sooji, they start to absorb in the water and lumps start to form. This is where you have to stir continuously so that you can attain the texture that I got as seen in the picture. Do taste if there is enough salt, if you feel it requires some more, do add with steady fingers as the dish can get very salty if you are not careful. As you stir, you will finally attain a nice texture, do stir on a medium flame, do not let the rawa burn...if it does, all your hard work was in vain. :(
Garnish with fresh curry leaves and some grated coconut. At this juncture I've drizzled in a half tspn of ghee. This dish can be eaten with a banana/some sugar/egg roast/plain or like how I have had with my sister-in-law, Usha chechi's mango pickle-that's how my kids and I love it as well!
Enjoy...whenever I have this dish, I am reminded of an old South Indian film of the Malayali actor, Mohanlal -inorder to woo a girl, he tries to speak English which he is not confident with and does a literal translation to this dish as Uppu which means Salt and Mavu-which is Mango tree, so when put together it is Salt Mango tree-Enjoy! |
