Stuffed Bell Peppers/capsicums and tomatoes

Here you can see how the cheese has melted through and how the top part has been grilled.

Look at these fat mamas...they were really yummy!


The grilled tomatoes-Oh, I did half my tomatoes, stuffed both halves with the rice and topped each with some cheese
The Last pic was step one-stuffed my bell  peppers and tomatoes with some fried rice and topped it with Mozarella cheese and grilled these babies in my microwave for ten minutes.

Rice- was some left over rice which I tossed up in some olive oil with American corn, added salt to taste and my lemon pepper spice. Once the rice was fried, I stuffed each tomato or bell pepper with the rice. I did add some pomegranate seeds as well from a very ripe pomegranate.

Bell Peppers- Use colourful peppers for a nice visual appeal. By the way do scoop out all the seeds of both the bell peppers and the tomatoes, you should use the cavity for stuffing it with the rice.
