Lemon Granita
This is a simple refreshment that can be done with any flavour of your choice. I had some lemon squash at home, added to it adequate sugar and water and some gelatin( which was already stirred and dissolved in warm water) and placed it all in a dish in the freezer. Once it was frozen, kept scraping through with a fork to get that crushed ice/granita look as shown in the second pic.
Placed it in a tall glass as shown above, and for decorative purpose garnished it with a lemon wedge and a fried pancake(if you browse through my Ethakka appam recipe, I have used the same batter sans the ethakkas)
Please serve it as soon as you are about to have your dessert and don't serve and keep it out for long, the granita will melt and that fried dough will lose its crispness.
I think you can try out with other flavours as well, this was quite refreshing! Do remember that the fried dough is sweet, hence reduce the sugar added to your granita so as to maintain a balance!
