Avial-not the band!

Avial is a mixture of various vegetables of your choice-preferably carrot, drumstick, raw banana, Malabar Velerikya,Snake gourd,peas, potatoes,Yam, Butter Squash,long beans etc

Cut all the above veggies to an inch long and cook them with a tsp of turmeric powder in a large vessel depending on the amount of diced vegetables you have. Grind some grated coconut, cumin seeds, two or three green chillies , two or three pearls of garlic along with two or three tbsps of curd. This ground mixture can remain coarse, it need not be made to a paste consistency. Once all the veggies are cooked, add this coarse mixture to it, stir the mixture around such that all the veggies mix well with the mixture. Add salt to taste. Garnish with fresh curry leaves and a tbsp of coconut oil. This oil must draw one and all to the table for lunch, even your neighbours should know that you've cooked Avial for the day :) My mom used to patiently cook the different veggies as per their cooking time, she would add the starchy veggies initially as they would take a longer time and later on the other veggies which would cook faster.

As I don't have her patience...sorry Mama!, I took the easy way out, cooked all at one go! please don't' make it mushy. Try to make the veggies medium firm. My mother also used to add a few diced Okra as well towards the end. It's your choice really! Those who would like to see a white Avial, you can avoid the turmeric powder. This is filling and is not difficult to prepare at all.Eaten at various feasts as a delicacy especially in the Southern states of India like Kerala and Tamil Nadu.
